Meat doesn't spoil overnight, but for steak tartare you really want to use the freshest of the fresh.<br /><br />Something tells me you had no plans to serve steak tartare to teh Buxom household, though. Then put the lid on the pan and shake it until the soft parts of the potato mash up with everything. Mmm!
